Garlic simmers in huge metal pots heated over open wood fires and set up in a long line. Cooks add canned tomatoes and peppers with handfuls of spices, stirring the sauce with giant spoons. What is being prepared here is not just lunch; it is a lifeline.

American Near East Refugee Aid (Anera) opened this community kitchen in al-Zawayda in central Gaza after the ceasefire began six weeks ago. The US humanitarian organization has another kitchen in al-Mawasi in the south of the strip. Back then, two months into an Israeli blockade that was preventing the entry of all food and other goods, stocks were dwindling. Now, while the situation has improved, significant gaps in essential supplies remain.

Each day, Anera feeds a hot meal to more than 20,000 people, significantly increasing their operational capacity. We are targeting more than 30 internally displaced people's camps, says team leader Sami Matar. Access to food has been a constant concern since the start of the war in October 2023, with Israel heavily restricting supplies through Gaza's crossings. This has exacerbated the dire humanitarian situation, leading to confirmed famine conditions.

Despite improved access, essential proteins like meat and chicken are still missing from the menu. Currently, meals prepared in kitchens are predominantly rice, pasta, and lentils, and the lack of fresh vegetables is also felt. Anera’s kitchens still need basic cooking resources as well, including utensils and gas for cleaner cooking.

As daily meal distribution increases, the UN reports that over 1.4 million meals are now being served daily, which unfortunately still falls short for the total population of over two million. Many families are facing challenges as they find themselves living in borrowed tents with limited resources.

In the aftermath of extended conflict, hope remains fragile as families seek both security and the ability to provide meals for their children. The continued humanitarian effort is crucial, but significant barriers remain, and the call for the easing of restrictions on humanitarian aid persists.
